Kerala apam and stew

Ingredients to make Kerala apam and stew

  • Raw rice 3 cups soaked for 4 hours
  • coconut 1 number big
  • Dry yeast 1/4 teaspoon
  • sugar 1 teaspoon
  • baking soda 1/2 teaspoon
  • sugar 6 table spoon
  • salt 1 table spoon

How to make Kerala apam and stew

  1. Dry grind raw rice and make flour
  2. Sieve it for no grains
  3. In a pan add the grains we got on sieve and a table spoon of flour and add 1 1/2 cup water and mix well
  4. In low flame cook it till it becomes a paste like consistency
  5. Add sugar and yeast in Luke warm water and allow it to rise
  6. Add the yeast mixture to the cooked dough and let it cool
  7. Add the ground flour in it
  8. Mix well with hand. It will like roti dough
  9. Rest it over night for fermentation
  10. In the morning take coconut milk from coconut
  11. In the dough add the coconut milk and make it in pouring consistency
  12. Add sugar and salt and keep aside for 30 minutes
  13. In the appam kadai make crispy appam and serve hot

My Tip:

While making appam cook in low flame and tilt the kadai each side to make it crispy every side.
