Ingredients Serving: 1

  1. Leftover Roties 2 to 3
  2. Moong Sprouts 2 tbsp
  3. Chana daal soaked 1 tbsp
  4. peanuts 1 tbsp
  5. Onion 1 small (chopped)
  6. Garlic cloves 3 ( chopped fine)
  7. Puffed rice 1/2 cup
  8. Oil 3 tbsp
  9. Mustard seeds 1/2 tsp
  10. Red chili dried 1
  11. Red chili powder 1/2 tsp
  12. Turmeric 1/4 tsp
  13. Salt to taste.
  14. While serving
  15. Onion 1/2 chopped
  16. Bhujia sev 1 tbsp
  17. Temrind jaggery chutney 1 tbsp
  18. Garlic chutney 1 tsp
  19. Coriander leaves chopped 1 tsp
  20. Green chilli finely Chopped 1
  21. Pomegranate seeds 1 tbsp.
  22. Unripe mango( seasonal ) 1 tbsp chopped.
  23. Salted boondi ( optional) 1 tbsp
  24. Salted Cashews 3 to 4 ( optional)

Instructions

  1. Heat 2 1/2 oil in a pan .
  2. Add peanus , fry for a minute. Remove with slotted spoon on absorbent paper. Let cool.
  3. Add Chanadaal, fry brown on medium high heat. Remove on absorbent paper.
  4. Add Sprouts, fry , take out with the help of slotted spoon.
  5. Simultaneously heat 2 tsp oil , add few mustard seeds. After it Splitter add puffed rice.
  6. Add turmeric and salt to taste. Saute for 2 minutes. Turn off heat . Keep aside.
  7. Now add mustard seeds in the oil you fried Sprouts, add red chili pieces too.
  8. Let them splutter , add Chopped onions , saute for 2 minutes.
  9. Add turmeric, chilli powder, coriander powder.
  10. Make bite sized pieces of roti and add in the oil.
  11. Now stir fry it till it becomes crispy.
  12. Adjust salt.Turn off heat. Transfer in a bowl.
  13. Now add fried peanuts, Chanadaal, Sprouts.
  14. Add Chopped onion, Tomato,
  15. Add Temrind chutney., Garlic chutney.Mix well.
  16. Add boondi, salted Cashews if adding.
  17. Add pomegranate seeds. Mix well.
  18. Serve with garnish of bhujia Sev and coriander leaves chopped.
