ABOUT Ambila RECIPE

Ambila Recipe is from Orissa, which can also be termed as 'Odiya rasam' as it is similar to the south indian delicacy. But as compared to the latter it is quite loaded with vegetables, usually the seasonal variety.

Ingredients Serving: 4

  1. Pumpkin – ¼ Cup (cut into cubes)
  2. Radish – ¼ Cup (cut into cubes)
  3. Arum – ¼ Cup (cut into cubes)
  4. Eggplant – ¼ Cup (cut into cubes)
  5. Carrot – 1 (cut into cubes)
  6. Okra – 2 to 3 (cut into cubes)
  7. Drumstick – 1 (cut into lengthwise)
  8. Tomato – 1 (chopped)
  9. Yogurt – 3 teaspoon
  10. Besan – 1 teaspoon
  11. Turmeric Powder – ½ teaspoon
  12. Red Chilli Powder – ½ teaspoon
  13. Whole Dried Red Chillies – 2 to 3
  14. Curry leaves – 7 to 8
  15. Panch Phoran – 1 teaspoon
  16. Tamarind Pulp – 1 teaspoon
  17. Garlic Cloves – 2 to 3 (chopped)
  18. Salt – to taste
  19. Oil – as required

Instructions

  1. Take a bowl, mix yogurt and besan. Now add 4 teaspoon of water and mix properly. Get sure there will no lumps in it.
  2. Dissolve the tamarind pulp in 3-4 teaspoon water and keep aside
  3. Heat a pan. Add 1 teaspoon oil and shallow fry the tomatoes and keep aside.
  4. Now shallow fry all the vegetable except drum stick.
  5. In a vessel, add 5 to 6 cups of water and boil all the vegetables , drum stick and tomatoes with turmeric powder and salt.
  6. When vegetables are half cooked add besan and yogurt mix. Mix well. Then add the tamarind water. Mix it.
  7. Let the vegetable cook properly in a medium flame. When the vegetables are cooked properly switch off the flame.
  8. For tempering, heat 2 tbsp oil in a pan and add panch phoran. When they starts crackling, add chopped garlic, whole dried red chillies and curry leaves. Sauté for 1 minute till garlic turns to golden brown colour .
  9. New add red chilli powder and immediately pour the tempering to the cooked vegetables. Mix well.
  10. Transfer into a serving bowl and serve with rice.
