My style of vegetables gravy made in kadai style

Kadai veg gravy

Ingredients to make Kadai veg gravy

  • onion 1
  • tomato 1
  • Chopped vegetables of your choice 2 cups
  • ginger garlic paste 1 teaspoon
  • salt as required
  • chilli powder 2 teaspoons
  • coriander powder 2 teaspoons
  • cumin powder 1 teaspoon
  • turmeric powder 1/2 teaspoon
  • water as required
  • oil 2 tablespoons
  • Kasuri methi 1 tablespoon
  • cashew paste 1/2 cup
  • Fresh cream 2 tablespoons
  • bay leaf 2
  • cardamom 3
  • cinnamon 1
  • cloves 3
  • star anise 2
  • cumin seeds 1/2 teaspoon
  • fennel seeds 1/2 teaspoon
  • coriander leaves to garnish

How to make Kadai veg gravy

  1. Heat oil in a kadai and add cumin seeds,fennel seeds, cinnamon stick, cloves cardamom, bay leaf , star anise and saute
  2. Add chopped onions and saute till translucent and add ginger garlic paste.
  3. Once well sauted add chopped tomatoes and cook them well to blend.
  4. Add the masala powders and cook till raw smell goes.
  5. Add required water and close and cook for a minute.
  6. Add chopped vegetables of your choice and saute them.
  7. Fry them with the masala without adding water for a minute.
  8. Now add required water and cook till the vegetables are done. Add required salt
  9. Add cashew paste and fresh cream to the gravy.
  10. After 5 minutes add kasuri methi and garnish with coriander leaves.
