Ingredients Serving: 4

  1. Basmati rice -300 -400 gn
  2. Vegetables - 300 gm
  3. (Carrot,beetroot,peas or beans,cauliflower,potato)
  4. Onion-100 gm
  5. Fresh Tomato puree -100 gm
  6. Green chilli -3
  7. Ginger garlic paste-4- 5 tsp
  8. Garam masala-1 tsp( cinnamon,clove
  9. Cardamom mix)
  10. Chilli powder-1/2 tsp
  11. Turmeric powder -1/4 tsp
  12. Curd -2 tbsp
  13. Chopped few coriander mint leaves
  14. Small lemon - half.
  15. Oil - 3-4 tbsp,ghee - 2 tbsp.
  16. Salt - to taste.

Instructions

  1. HEAT 3 TBSP OIL AND 2 TBSP GHEE IN A HEAVY BOTTOMED VESSEL.ADD 100 GM CHOPPED ONION.
  2. SAUTE ONION ,ADD 5 TSP GINGER GARLIC PASTE,1 TSP GARAM MASALA( CARDAMOM,CINNAMON,CLOVE MIX)
  3. SIMMER THE STOVE FOR A MINUTE.
  4. ADD FEW CHOPPED CORIANDER ,MINT LEAVES AND 3 GREEN CHILLIES.STIR WELL.
  5. NOW ADD 2 PUREED TOMATOES AND 300 GM VEGETABLES MIX( CARROT,PEAS,CAULIFLOWER,POTATO AND BEETROOT )
  6. ADD TOMATO PUREE AND MIX WELL.
  7. ADD SALT TO TASTE, 1/4 TSP TURMERIC POWDER AND 1/2TSP CHILLI POWDER.
  8. SAUTE WELL.
  9. LET IT COOK FOR A MINUTE.
  10. ADD THE CUT VEGETABLES.MIX WELL.POUR 1/2 CUP WATER AND COOK FOR 5 MINUTES.
  11. RINSE,SOAK 300 GM BASMATI RICE FOR 15 MINUTES AND DRAIN IT.CLOSE THE BRIYANI POT WITH LID.
  12. AFTER 5 MINUTES OPEN AND ADD 2 TBSP CURD.
  13. COOK FOR 2 MINUTES.
  14. SPREAD RICE.
  15. ADD FEW CHOPPED MINT AND CORIANDER LEAVES.POUR HOT WATER 1: 1.5 RATIO.
  16. CHECK AND ADD LITTLE SALT TO TASTE.
  17. CLOSE AND COOK FOR 7-10 MINUTES IN A VERY LOW FLAME.
  18. OPEN AND ADD 1/2 SMALL LEMON'S JUICE AFTER 7 MINUTES.
  19. COVER WITH ALUMINIUM FOIL,CLOSE WITH LID, ALLOW IT TO DUM FOR 10 MINUTES IN A VERY LOW FLAME.
  20. AFTER 15 MINUTES OPEN AND MIX WELL.
  21. VEGETABLE DUM BRIYANI READY.
  22. SERVE WITH SUITABLE SIDE DISHES.
