Kolkata style chicken biryani

Ingredients Serving: 4

  1. 1.5 cup basmati rice soaked for 30 min
  2. 250 gm chicken.
  3. Marination
  4. 2 onion
  5. 1 stick cinamon
  6. 2 green cardamom
  7. 1 green chillies chopped
  8. 3 dried red chilli
  9. 1 tbsp coriander seeds
  10. 2 cloves
  11. 5 pepper corns
  12. Turmeric
  13. 1 tsp garam masala.
  14. All grinded into paste
  15. 2 tbsp curd
  16. 1 tbsp ginger garlic paste
  17. 1 star anise
  18. 1 bay leaf
  19. 1 cup wrm milk
  20. 1 tbsp ghee
  21. Coriander leaves
  22. 2 potatoes halves
  23. 1 boiled egg.
  24. 4 onions chopped

Instructions

  1. Marinate the chicken with grounded paste, curd, ginger garlic paste turmeric powder and garam masala. Keep overnight
  2. Soak rice for 30 min
  3. In meanwhile heat oil in pan. Fry the halved potatoes. Keep aside.
  4. Now fry half of the sliced onions till golden. Keep aside.
  5. In a heavy bottom vessel heat ghee and oil. Add dried whole spices. Add half remaining onion. Fry well.
  6. Add the marinated chicken. Cook covered for 15 min. Add fried potatoes and mix
  7. Parboil the rice with some green Chillies. And salt. Keep aside.
  8. Now .in the chicken vessel. Layer parboiled rice. Add some fried onion and coriander. Layer again.
  9. Add warm milk and ghee. On top. Add boiled egg. Cover the lid. Seal with atta dough.
  10. Cook on a low flame for 20 min. Put off the flame
  11. Let it stand for 15 min.
  12. Open and serve
