Thai Noodles with Spicy Peanut Sauce

Ingredients to make Thai Noodles with Spicy Peanut Sauce

  • 1 packet Rice noodles
  • 3 tbsp Oil
  • Spicy Peanut Sauce Ingredients:-
  • ½ cup Spring onion chopped the greens and onions separated
  • 1 cup Carrot finely shredded
  • 2 cups Mix veggie-cauliflower carrot mushroom bean capsicum
  • 3 tbsp Garlic minced
  • 1/2 tbsp Ginger minced
  • 1/4 cup Honey
  • 1/4 cup Peanut butter
  • 1/4 cup Soy sauce
  • 3 tbsp Rice vinegar
  • 1/2 tbsp Chilli-garlic sauce
  • Coriander leaves for garnish

How to make Thai Noodles with Spicy Peanut Sauce

  1. Read the package instructions and cook the rice noodles accordingly. I opted to soak the noodles in hot water for 45 mins, set this aside once cooked..
  2. Heat the oil in a thick kadhai/wok, add the onions, carrots, stir-fry veggies, garlic and ginger instantly once the oil is heated. Sauté until the vegetables soften.
  3. Then add the honey, peanut butter, soy sauce, vinegar and chilli-garlic sauce and blend it well. Let this simmer for 2 mins or so.
  4. In the meantime, drain the rice noodles and toss them in the kadhai/wok. Mix it well with the vegetables and sauce.
  5. Serve warm by garnishing with spring onion greens and coriander leaves.
