Sindhi style Besan ki Tikki ki Sabzi is very popular sindhi dish. This recipe is made with the base gravy which is so delicious and it is so quick and easy to make. When you don't have many options in vegetables, you can quickly make this and serve with hot roti or parathas.

Ingredients Serving: 3

  1. For Tikkis : Chickpea flour (besan) – 1 cup
  2. Poppy Seeds – 1 tsp
  3. Green Chillies – 1 to 2 (finely chopped or crushed)
  4. Dry Pomegranate Seeds (anardana) – ¼ tsp (crushed)
  5. Fresh Coriander Leaves – a handful (finely chopped)
  6. Turmeric Powder – ¼ tsp
  7. Red Chilli Powder – to taste
  8. Cumin Seeds – ¼ tsp
  9. Oil – 2 to 3 tsp
  10. Salt – to taste
  11. Water – for making dough and for boiling
  12. Oil – to deep fry
  13. For Curry : Onion – 1 large (finely chopped)
  14. Tomatoes – 2 medium (finely chopped)
  15. Turmeric Powder – 1/3 tsp
  16. Coriander Powder – 1 tsp
  17. Garam Masala – ¼ tsp
  18. Red Chilli Powder – to taste
  19. Kasoori Methi Powder – ½ tsp
  20. Salt – to taste
  21. Oil – 1-1/2 tbsp
  22. Water – 1-1/2 to 2 cups
  23. Fresh Coriander Leaves – a handful (for garnishing)

Instructions

  1. Mix Chickpea flour, poppy seeds, green chillies, dry pomegranate seeds, coriander leaves, red chilli powder, turmeric powder, salt, cumin seeds and oil together. Add little water at a time and kneed a hard but manageable dough.
  2. Now make small lemon sized balls from the dough and flatten them lightly.
  3. Boil water in a pan and put all tikkis in the water and boil it for 2-3 minutes. Take out the tikkis from water.
  4. Now let the tikkis comes at room temperature.
  5. Heat oil in a kadhai and deep fry the tikkis until golden brown and cooked from inside. Drain on an absorbent paper.
  6. Meanwhile, heat 1-1/2 tbsp oil in a pressure cooker and add chopped onions. Saute it until golden brown in colour
  7. Now add turmeric powder, chopped tomatoes, coriander powder, garam masala, red chilli powder, salt and kasoori methi powder.. Mix well and keep stir for a while.
  8. Add water, mix well and close the lid of pressure cooker. Now wait for the 3 whistles and cook for another 2 minutes on low flame.
  9. Adjust the thickness of gravy and check the spices.
  10. Put fried tikkis into the cooker and cook for 4 to 5 minutes or until the tikkis turns soft and absorb the flavour of the gravy.
  11. Garnish with the chopped coriander leaves and serve hot.
