ABOUT Suryakala RECIPE

Surya means sun, hence the name Suryakala as it looks like sun.Suryakala is a rich sweet made during festivals, specially Diwali. Its also one of my most favourite sweet:)

Ingredients Serving: 6

  1. For the outer covering
  2. Maida - 2 cups
  3. Ghee- 4 tbsps
  4. Salt - a pinch
  5. Baking soda- 2 pinches
  6. For the stuffing
  7. Khoya- 1 cup
  8. Pista - 2 tbsps
  9. Almond- 2 tbsps
  10. Cardamom powder- 1/2 tsp
  11. Sugar- 4 tsps
  12. For the sugar syrup
  13. Sugar - 1+1/2 cups
  14. Water - 1 cup
  15. Saffron- a big pinch
  16. Milk - 2 tbsps
  17. Oil or ghee – as much required for deep frying

Instructions

  1. To make the sugar syrup
  2. Add sugar and water in a pan. When the sugar melts completely and starts boiling, add 2 tbsps of milk.
  3. On adding the milk, the scum ( the dirt in the sugar) will start floating on top. Remove the scum and strain the syrup.
  4. Wash the pan and add the syrup back. Add the saffron. Let it boil till reaches one string consistency. Switch off the gas and add lemon juice and mix well. Keep the syrup warm.
  5. To make the outer covering
  6. In a bowl add maida, ghee, salt and soda. Mix it well with your finger tips till it becomes like a crumble.
  7. Add required amount of water and knead to a smooth and pliable dough. Cover and rest the dough for 10-15 min.
  8. To make the stuffing
  9. Powder the nuts coarsely. Crumble the khoya well. Mix the nuts, khoya, cardamom powder and sugar well. Keep it aside.
  10. To make the Suryakala
  11. Grease the rolling pin and the board with little ghee.
  12. Take a portion of the dough, roll into a circle. Cut into roundels. Make 24 such roundels.
  13. Take one roundel. Keep some stuffing in the centre. Close with another one. Press the edges well and close it well. Make a spiral pattern by pinching the dough and closing it ( as shown in the pic.)
  14. Similarly make with the rest.
  15. Deep fry on a median flame till it becomes golden brown on both sides. Remove and drain the excess oil.
  16. Immerse it in the sugar syrup and let it be in the syrup for 15-20 mins.
  17. Remove and drain the excess syrup. Let it cool and store it in an air tight container.
