ABOUT jalebi RECIPE

jalebi is my childhood sweetheart dessert. We never used to leave any opportunity of eating them hot in the market place. Making them in the comfort of your home and that too from leftover rice gives an immense pleasure to your mind and taste buds, of course.

Ingredients Serving: 6

  1. 3/4 cup leftover rice
  2. 3/4 Cup All purpose Flour
  3. 3/4 cup Gram flour
  4. 100 GM CURD
  5. Water, as required
  6. 1/2 tsp turmeric powder
  7. pinch baking soda
  8. For sugar syrup
  9. 1 cup sugar
  10. 1/2 cup water
  11. 1-2 drops lemon juice
  12. 5-6 saffron strands
  13. chopped almonds and pistachios , for garnish

Instructions

  1. Blend the leftover rice in blender with some water.
  2. In a bowl , take both the flours and add the rice paste to it.
  3. Mix the curd to the above mixture and whisk well.
  4. Add water to make a smooth batter.
  5. Keep this batter aside for 4-5 hours for fermentation.
  6. After 5 hours , add turmeric powder and baking soda to this batter and mix well.
  7. The batter should be thick like dosa batter but free flowing consistency.
  8. For the sugar syrup take sugar , water, saffron strands and lemon juice in a pan and make chasni with single thread consistency.
  9. Put the batter in a ketchup bottle or any cone to make jalebis.
  10. Heat oil in a wok and make concentric circles with the batter.
  11. Deep fry the jalebis till golden brown from both sides.
  12. Dip the jalebis in warm sugar syrup and then take out.
  13. Garnish with chopped almonds and pistachios and serve hot.
