ABOUT Cheesy Corn Dip RECIPE

A perfect party food. This goes well with veggies, nachos and chips.

Ingredients Serving: 6

  1. 1 tbsp butter
  2. 1.5 cups fresh or frozen corn
  3. 1 medium sized onion, finely chopped
  4. 5-6 pods garlic minced
  5. 1 red bell pepper
  6. 1 and 1/4 cup cheddar cheese
  7. 1/2 cup sour cream
  8. 1/2 cup mayonnaise
  9. 1 tbsp hot sauce
  10. 1/2 cup cilantro
  11. 1 tsp chilli flakes
  12. Salt and pepper as per taste

Instructions

  1. Preheat the oven to 180 degrees celsius.
  2. In a pan, add butter, then add couple of drops of oil (to avoid the butter from burning). Next add minced garlic, once the garlic starts turning brown, add the chopped onion and cook till it looks transparent.
  3. Add the red bell pepper and corn, saute till it's soft and looks transparent (roughly for 5 minutes). Remove from heat and keep aside.
  4. In another bowl, add the cheese, mayo, sour cream, hot sauce, cilantro, salt, black pepper, chilli flakes (if using). Add the sauteed corn and onion mixture. Mix it well together.
  5. Pour this mixture into a baking dish. Bake for about 20 to 25 minutes or until the top is golden brown and the edges are bubbling.
  6. Serve hot out of the oven with nachos/chips/chopped veggies.
