About Rabdi Recipe

Rabdi is a milk based sweet. It is cooked on low heat stirring continously until it thickens and gets dense texture. It is sweetened with sugar and flavoured with nuts and cardamom powder.

Ingredients to make Rabdi

  • 1 litre milk
  • 4 - 5 Tablespoons of sugar
  • 1 Tablespoon Milk Masala ( It contains cardamom Powder, Nutmeg Powder, Dry fruits powder and little Saffron, if you wish you can add each of them separately)
  • Slivered pistachio for garnishing
  • A pinch of saffron
  • Edible Silver Sheet / warq

How to make Rabdi

  1. In a non-stick deep pan , boil milk on low heat. As the layer of cream appears on top of milk, with help of spatula or wooden spoon move it towards the sides of pan.
  2. Continue doing same until the volume is reduced to 1/4.
  3. Now gently scrape cream from the sides of pan and mix well in reduced milk.
  4. Add milk masala into it and keep stirring contiously on low heat.
  5. Once milk gets thick consistency, add sugar and mix well. Switch off flame and let it cool down completely.
  6. Once cooled , garnish i with pisachios, saffron and silver warak.
