About Shahi Kheer Recipe

It's a milk based sweet. Very rich, flavourful, creamy with addition of khoya, sugar, nuts.

Shahi Kheer

Ingredients to make Shahi Kheer

  • 2 Litres Milk
  • 1 Cup Soaked and coarsely Grounded rice
  • Little less than 1/4 Cup Grated Khoya (mawa/Khawa)
  • 3/4 Cup sugar 
  • 1/2 Teaspoon Green cardamom Powder
  • 1/4 Teaspoon nutmeg Powder
  • Cashews. Almonds, Slivered pistachio for garnishing
  • saffron Threads

How to make Shahi Kheer

  1. This kheer i cooked in an earthern Pot. Traditionally it is cooked in an earthern / clay pot or big vessel.
  2. Firstly keep milk to boil in  a clay pot.
  3. Once milk starts to boil add coarsely ground rice and stir contionously so that it does not stick at bottom of pot.
  4. Once rice is cooked add sugar and mix well.
  5. Now kheer will start to thicken a bit. Add grated khoya and cook for about 5 minutes.
  6. Add dryfruits, saffron, cardamom powder and Nutmeg Powder.
  7. Let the kheer sit in this pot overnight for nice earthy flavour.
  8. Garnish with edible silver sheet and serve chilled.
