Brinjal gothsu

Ingredients to make Brinjal gothsu

  • Big brinjals- 2
  • Shallot onions- 10
  • tomato - 2
  • Sambar powder - 2 tbsp
  • oil - 2 tbsp
  • mustard seeds- 1/2 tsp
  • curry leaves- a bunch
  • tamarind pulp juice - 1/2 cup
  • salt to taste
  • coriander leaves to garnish

How to make Brinjal gothsu

  1. In a pan, heat oil, add mustard seeds, Curry leaves when splutters add chopped shallot onions and saute till golden brown.
  2. Add chopped tomatoes and cook till it's soft and mushy.
  3. Add chopped brinjal to it and give a stir.
  4. Add sambar powder to it and saute for a minute.
  5. Add required water and salt and cover and cook this for 15 minutes or untill brinjal is cooked completely.
  6. Mash them together and add tamarind pulp juice to it .
  7. The gravy will start to thicken. Check for seasoning and garnish with coriander leaves.
  8. Serve hot with idly or rice
