Pineapple Upside down cake

Ingredients to make Pineapple Upside down cake

  • 8-10 Pineapple pieces sliced (I used delmonte slices)
  • 6-8 Cherries or 3-4 tbsp Tutti frutti
  • 1 and 1/3 cup All purpose flour
  • 1/2 cup Pineapple syrup from the canned pineapples
  • 1/2 cup Butter
  • 1/2 cup White Castor sugar
  • 3/4 cup Butter milk
  • 1/4 cup Light brown sugar
  • 1 Egg
  • 1 Egg yolk
  • 3 tbsp Melted butter
  • 3 tbsp Brown sugar
  • 1 tsp Baking powder
  • 1 tsp Vanilla essence

How to make Pineapple Upside down cake

  1. Line a cake tin with parchment and preheat your oven at 180C. Add 1 tsp vinegar in the butter milk and let it sit for 10 mins.
  2. Combine melted butter with brown sugar, spread it evenly at the base of pre lined cake tin. Arrange pineapple slices and cherries/tutti fruitti on a pattern as per your choice on this.
  3. Sift flour and baking powder in a bowl. In another bowl cream butter and sugar, add egg and beat well. To this add half of sifted flour and combine.
  4. Pour in pineapple syrup and half the buttermilk. Stir until well combined. Now add in remaining flour, syrup and buttermilk. Combine well.
  5. Now carefully pour in this batter n top of arranged pineapple base. Tap to level the cake on top.
  6. Place this in oven and bake for 25-30 mins or until skewer runs clean when inserted in the centre.
  7. Once the cake is done, remove onto wire rack and leave it to cool. Serve with love.
