Beetroot hummus

Ingredients to make Beetroot hummus

  • 1 cup chick peas (dried)
  • 1 cup beet root
  • 1/2 lime/lemon
  • 1/4 cup tahini
  • 3 cloves garlic
  • 1/2 tsp chilli flakes
  • 1/4 cup olive oil
  • Salt to taste

How to make Beetroot hummus

  1. Soak the chickpeas over night in water. The next day put this chickpeas into a pressure cooker along with 2 cups of water and 1 tsp salt. Pressure cook on high till 1 whistle blows initially, then 5 whistles on a medium flame. Allow the pressure to leave on its own.
  2. Drain the chickpeas in a colander.
  3. While the chickpeas are cooking, you can steam the beet root. Peel and chop the beetroot, steam it in a steamer or place a colander over a sauce pan of water. Place the chopped beetroot in it and close the lid, cook until its soft.
  4. To a food processor or a blender add all the ingredients listed and blend it to a fine puree. If needed add some water while grinding.
  5. Your beet root hummus is ready to be served. Drizzle it with some olive oil and serve it as a dip with your choice of flat breads.
