ABOUT Beetroot hummus RECIPE

Beetroot hummus is a variation of hummus wherein regular hummus is blended with beetroot. The addition of beetroot apart from lending a bright red colour to the hummus is that it increases it's nutritive value as well.

Ingredients Serving: 6

  1. 1 cup chick peas (dried)
  2. 1 cup beet root
  3. 1/2 lime/lemon
  4. 1/4 cup tahini
  5. 3 cloves garlic
  6. 1/2 tsp chilli flakes
  7. 1/4 cup olive oil
  8. Salt to taste

Instructions

  1. Soak the chickpeas over night in water. The next day put this chickpeas into a pressure cooker along with 2 cups of water and 1 tsp salt. Pressure cook on high till 1 whistle blows initially, then 5 whistles on a medium flame. Allow the pressure to leave on its own.
  2. Drain the chickpeas in a colander.
  3. While the chickpeas are cooking, you can steam the beet root. Peel and chop the beetroot, steam it in a steamer or place a colander over a sauce pan of water. Place the chopped beetroot in it and close the lid, cook until its soft.
  4. To a food processor or a blender add all the ingredients listed and blend it to a fine puree. If needed add some water while grinding.
  5. Your beet root hummus is ready to be served. Drizzle it with some olive oil and serve it as a dip with your choice of flat breads.
