ABOUT Dal or Varan RECIPE

Varan-bhaat is a vegan, Indian food preparation involving pigeon pea split beans and rice as its main ingredients. Its other ingredients are turmeric powder, cumin seeds, asafoetida, jaggery and salt. Varan is a staple and quite popular in Goa and Maharashtra region. It is consumed on an everyday basis as well as in fasting, religious functions, Marriages. Easy to prepare, non-spicy, require few ingredients and has a subtle taste. Very nutritious and goes well with steamed rice, pickle and papad. It’s our traditional varan recipe which is passed down to me by my Grandmother. One of the favourite dish in our house and consumed thrice a week. Instead of Tur, Moong dal is also used for making dal.

Ingredients Serving: 6

  1. Tur Dal – 1/2 cup
  2. Finely chopped onion- ½ small
  3. Cumin seeds – ½ tsp
  4. Mustard seeds – ½ tsp
  5. Curry leaves – 3-4
  6. Garlic cloves crushed – 2-3
  7. Green chilli Slit – 1-2
  8. Asafoetida – ½ tsp
  9. Turmeric – ½ tsp
  10. Finely chopped tomato – 1 small
  11. Finely chopped coriander leaves – 2- 3 tbsp
  12. Grated coconut – 2 tbsp
  13. Salt to taste
  14. A small pinch of sugar (optional)
  15. Oil – ½ tbsp

Instructions

  1. Wash and cook tur dal adding chopped onion in a pressure cooker for 3 whistles.
  2. In a wok or pan heat oil. Add mustard and cumin seeds. Let it splutter.
  3. Add curry leaves. Stir it. Add minced or crushed garlic, chilli. Cook well.
  4. Add Asafoetida, Turmeric, Tomato. Cook till tomato softens.
  5. Add cooked tur dal-onion mixture, salt, a small pinch of sugar. Mix well.
  6. Add finely chopped coriander leaves and grated coconut. Mix well. Simmer it for 2-3 minutes. Adjust the consistency as per your requirement.
  7. Serve hot with Steamed Rice.
