About Ulundhu kazhi Recipe

A super healthy dish from my 'Grandma's pitara'. This protein-rich, iron-rich 'Ulundhu Kazhi' is one of the age-old recipes of Thirunelveli district in South Tamilnadu. The amazing combination of black urad dhal, palm jaggery and til oil, makes this kazhi incredible in taste and rich in flavour. It is best suited for women and girls as it strengthens hip bones and uterus. This is specially prepared and fed to young girls during their first mensuration.

Ingredients to make Ulundhu kazhi

  • Black urad dhal - 1/2 cup
  • Raw rice - 1/4 cup
  • palm jaggery - 1/2 cup
  • Sesame/til oil - 1/2 cup
  • elaichi powder - a pinch

How to make Ulundhu kazhi

  1. TAKE 1/2 CUP BLACK URAD DHAL IN KADAI
  2. ADD 1/4 CUP RAW RICE
  3. DRY ROAST TILL GOLDEN IN COLOUR
  4. TRANSFER IT TO MIXER JAR
  5. SEIVE TWICE
  6. SEIVED FLOUR LOOKS LIKE THIS
  7. TAKE 1/2 CUP PALM JAGGERY
  8. ADD 1/2 CUP WATER
  9. BOIL TIL JAGGERY DISSOLVES
  10. STRAIN TO REMOVE DIRT
  11. HEAT KADAI; ADD 1/2 CUP SESAME OIL
  12. ADD URAD DHAL-RICE FLOUR IN HOT OIL
  13. MIX WELL; ADD PALM JAGGERY SYRUP
  14. KEEP STIRRING TILL IT BUBBLES
  15. ADJUST WATER IF NEEDED
  16. ADD ELAICHI POWDER
