About Versatile Crunchy Curry.( For Rice, Roti, noodles, ) Recipe

This Curry has Sprouts, Broccoli, Spring onions, Spinach, French beans, Onion, fresh green garlic . You can play with the flavours by adding herbs and Sauce of your choice.

Versatile Crunchy Curry.( For Rice, Roti, noodles, )

Ingredients to make Versatile Crunchy Curry.( For Rice, Roti, noodles, )

  • Moong Sprouts 1 cup.
  • spinach blanched 1 cup.
  • spring onions finely chopped 1/2 cup.
  • French beans chopped fine 1/2 cup.
  • Broccoli grated 1 cup.
  • onion chopped 1
  • garlic finely chopped 1 tbsp
  • ginger finely chopped 2 tsp
  • coriander leaves finely chopped 2 tbsp
  • Green chilli paste 1 tsp.
  • coconut Milk 2 tbsp
  • coriander powder 1 tbsp
  • turmeric powder 1/4 tsp
  • Garam masala 1 tsp.
  • Apple butter Sauce 2 tbsp
  • Tamerind chutney 1 tsp
  • Cajun seasoning 1/2 tbsp ( optional)
  • Dried parsley 1/4 tsp
  • FRESH cream 2 TBSP
  • Canola oil 1 tbsp
  • salt to taste.

How to make Versatile Crunchy Curry.( For Rice, Roti, noodles, )

  1. Keep ready all the vegetables.
  2. Heat oil in a non stick pan. Add Chopped french beans.
  3. Add onion and Sprouts.
  4. Saute for 2 minutes. Now add broccoli and Spring onions.
  5. Stir fry for 4 minutes.
  6. Add Garlic, Ginger, Coriander powder, Turmeric, garam masala , chilli paste.
  7. Saute for 2 minutes more. Add salt half cup water and cover .
  8. Chop blanched spinach finely and add to the curry mixture after 3 to 4 minutes.
  9. Let it cook covered for few minutes more.
  10. Let all ingredients merge well. Add Chopped Coriander leaves.
  11. Add fresh cream, Cajun seasoning and dried Parsley and turn off the heat.
  12. Your delicious Curry is ready.
  13. You can serve it with Roti, Paratha.
  14. You also can serve it with Rice or Pasta.

My Tip:

You can substitute fresh cream with Yogurt , can add boiled chicken pieces to make non-vegetarian.
