ABOUT Grandma's Kara Keerai Adai RECIPE

Grandma's Kara Keerai Adai is a combination of rice, thoor dhal and bengal gram added to dried chillies, pepper corns, asafoetida and salt to taste. All soaked and grounded except, asafoetida and salt. To the batter add sautéed onion and greens and mix well. Adai is made with sprinkled shredded coconut on top and oil spreaded on a tawa by flattening with fingers in an authentic style. Grandma's Kara Keerai Adai can be served with any chutneys, jaggery or can have it plain.

Ingredients Serving: 3

  1. For Adai batter
  2. Rice 1/2 cup
  3. Thoor dhal 1/4 cup
  4. Bengal gram 1/2 cup
  5. Dried chillies 10
  6. Pepper corns 11/2 teaspoon
  7. Onion 1
  8. Any variety of greens 2 fistful(I used dhal greens)
  9. Coconut shredded 1/4 cup
  10. Asafoetida 1/2 teaspoon
  11. Salt to taste
  12. Oil 1/4 cup
  13. Water for soaking

Instructions

  1. INGREDIENTS FOR GRANDMA'S KARA KEERAI ADAI(SPICY GREEN ADAI.
  2. ADD DRIED CHILLIES, RICE, THOOR DHAL AND BENGAL GRAM TOGETHER IN A BOWL. WASH TWICE.
  3. SOAK THE DHAL AND RICE MIXTURE FOR TWO HOURS.
  4. IT'S WELL SOAKED AND READY TO GRIND.
  5. ADD SOAKED DRIED CHILLIES FIRST IN A GRINDER. LET IT GRIND AND BECOME A PASTE.
  6. ADD PEPPER CORNS AND WAIT TILL IT'S MIX WELL WITH CHILLI PASTE.
  7. LASTLY ADD DHAL AND RICE TO IT.GRIND TILL IT'S COARSELY GROUND. DO NOT ADD EXTRA WATER.
  8. THE BATTER HAS TO BE IN THICK CONSISTENCY.ADD ASAFOETIDA TO IT AND MIX WELL.
  9. LET THE ADAI BATTER REST FOR TWO HOURS.
  10. HEAT OIL IN A WOK ON A MEDIUM FLAME. ADD ONIONS AND SAUTE WELL.
  11. ADD ANY GREENS TO IT. I'VE ADDED LOCAL DHAL GREENS(IT'S CALLED PARUPPU KEERAI IN TAMIL).
  12. SAUTE FOR TWO MINUTES. LET IT COOL.
  13. ADD ONION AND GREEN SAUTÉED MIX TO THE BATTER.
  14. MIX THOROUGHLY.
  15. ADD OIL IN A TAWA(IRON SKILLET). THOSE DAYS DOSA ADAI TAWA.
  16. TAKE A ROUND BALL OF KEERAI ADAI MIX AND FLATTEN WITH FINGERS DIPPED IN WATER.
  17. SPRINKLE SOME SHREDDED COCONUT AND PRESS WELL IN THE FLATTENED BATTER.
  18. ADD SOME OIL TO IT.
  19. WHEN IT'S COOKED ONE SIDE, FLIP IT TO THE OTHER SIDE.
  20. CHECK THE DONESS ON BOTH THE SIDES.
  21. SERVE GRANDMA'S KARA KEERAI ADAI WITH ACCOMPANIMENT LIKE COCONUT, TOMATO CHUTNEY AND JAGGERY.
  22. THE BEST COMBINATION FOR GRANDMA'S KARA KEERAI ADAI IS JAGGERY.
