About Prawn Mint Pesto curry Recipe

Sumptuous green pesto prepared to curry jumbo prawns , added to white sauce prepared to make it creamy.Coconut,curry leaves, greenchiillies and mint with some olive oil, created this pesto chutney style.Saute onions with ginger garlic and prawns cooked.White sauce used as base with green mint pesto added for flavour Its awesome .

Prawn Mint Pesto curry

Ingredients to make Prawn Mint Pesto curry

  • About 8-10 jumbo prawns or at least big than usual
  • 2small onions thin slices chopped
  • 1 potato cut in small cubes
  • 1tblspn ginger garlic paste
  • curry leaves
  • 2 tbspn green mint pesto or green mint chutney with coconut
  • salt to taste
  • 1/2tspn garam masala
  • 1tspn white pepper
  • For pesto
  • 1tspn olive oil
  • 5-6 twigs of mint/a cup of mint leaves
  • 1 cup chopped corriandr
  • 1/2cup dessicated coconut or fresh as available
  • 2-3 garlic pods
  • salt to taste
  • 1-2 green chillies
  • For white sauce
  • 1cup milk
  • 1 /2 cup cornflour
  • salt to taste
  • Sprinkle of pepper
  • 1/2 tspn oregano
  • 1 tblspn butter
  • 1tspn oregano

How to make Prawn Mint Pesto curry

  1. Prepare all ingredients required to start cooking
  2. Heat oil in a pan saute onions translucent add salt and turmeric
  3. Make the pesto ,washing all ingredients and grinding to paste add the olive oil to it
  4. Add the pesto 2tblspn here
  5. Mix cook 1 minute add the prawns and saute 2 minutes
  6. Add little water and chopped potatoes
  7. Cook for five minutes covered
  8. Add water if required to cook well
  9. Bring to gravy consistency and remove in a bowl
  10. Now prepare the white sauce melting butter in pan
  11. Add all dry ingredients for white sauce in cold milk and mix well
  12. Add this mix to heated butter,cook stirring 5 minutes
  13. Now add this to the ready prawn gravy
  14. Your gravy is ready
  15. Serve with white rice it's awesome and some spring onions and lime to go with it

My Tip:

Do the pesto before you start cooking,simply make a green paste ofcoconut, corriander,mint &greenchilli is also okto use
