About Brinjal curry Recipe

An easy recipe made with brinjal, to be served with some pulao.

Brinjal curry

Ingredients to make Brinjal curry

  • Brinjal : 2
  • Small onion : 5
  • garlic : 5
  • Sesame oil : 4 tsp
  • fenugreek : ½ tsp
  • Chilli powder and coriander powder : 1 tsp each
  • tamarind : small size
  • mustard seeds: ½ tsp
  • For coconut paste
  • Grated coconut 4 tsp
  • cumin seeds : ½ tsp
  • Small onion : 3

How to make Brinjal curry

  1. Heat oil in a pan, saute Mustard seeds, curry leaves and fenugreek.
  2. Add garlic and small onion, sliced brinjal and saute for 5 min.
  3. Add chilli powder, coriander powder, tamarind water, salt, required water and cook for 15 min.
  4. Add coconut paste and cook for 2 min.
