Savoury Whole Wheat Hungarian Kalács

Ingredients to make Savoury Whole Wheat Hungarian Kalács

  • For the Savoury dough - 150g Whole wheat flour
  • 150g all purpose Flour
  • 2 tsp instant Yeast
  • 1/2 tsp Salt
  • 25g Parmesan
  • 3-4 cloves Garlic minced
  • 200g Buttermilk tepid
  • 30 ml extra virgin Olive oil
  • Filling:-50g Cheese spread
  • Small bunch Rocket chopped
  • 1 small red Bell pepper chopped
  • 1 small yellow Bell pepper chopped
  • 2 small Chicken breasts cooked chopped
  • 1 tsp Red chili flakes
  • 50g Walnuts finely chopped
  • 75g mature Cheddar grated
  • 15ml low fat Cream {or 1 beaten egg} for wash
  • 10 g Melon seeds {or sesame pumpkin etc}

How to make Savoury Whole Wheat Hungarian Kalács

  1. To prepare savoury whole wheat dough, in a food processor add whole wheat flour, all-purpose flour, Parmesan, yeast and salt. Pulse on high to combine all.
  2. Make smooth and elastic dough by adding buttermilk, cloves, garlic and olive oil.
  3. Grease a bowl with oil and transfer the dough into it. Place the bowl in a warm corner by sealing it with cling wrap for about an hour.
  4. To assemble, when the dough has doubled, preheat your oven at 200C.
  5. Take a baking tray and line it with parchment paper. Set aside.
  6. Lightly dust the surface or use parchment paper. Make two half’s of dough. Roll one half into 10 inch circle.
  7. Gently transfer this circle on to prepared baking sheet and spread cheese spread uniformly. Scatter over chopped rocket, walnuts, bell peppers and red chili flakes along with finely chopped chicken and grated cheddar.
  8. Take another half of dough and roll it into 10 inch circle and gently place this over the first half. Press gently.
  9. Take a glass and place it in the center. Cut the dough 4 times, then again divide each into further 4 till wager total of 16 spokes.
  10. Carefully lift each spoke and twist it 3 times. Gently brush over with cream and sprinkle melon seeds in the center. {Alternatively you can brush with beaten egg for beautiful glow}.
  11. Bake this for 30-35 minutes until light golden brown and till feels firm on touching. Leave to cool on tray for 5 minutes and then transfer it to rack. You can serve warm or at room temperature.
