This is a Iyengar Gojju recipe

Bhendekayi Gojju

Ingredients to make Bhendekayi Gojju

  • bhindi / Ladiesfinger - 5 cup, chopped
  • curry leaves - few
  • salt to taste
  • oil - 2 tbsp
  • masala :
  • coconut , fresh - 1/2 cup
  • methi seeds - 1/4 tsp
  • Red chillies whole - 2 or 4 (adjust as per tate)
  • coriander seeds - 1/2 tsp
  • Blackgram - 1 tsp
  • jaggery - a small piece
  • Tamrind paste or puree - 1 tsp (for paste 1/2 tsp)
  • mustard seeds - 1/2 tsp

How to make Bhendekayi Gojju

  1. In a large pan add oil and bendekayi fry till cooked
  2. In a seperate small pan, heat and add all seeds(methi,coriander,blackgram,mustard seeds and red chillies) sligtly roast them
  3. In a mixer add coconut , jaggery, tamarind and mix roasted ingredients add water and blend into a smooth puree
  4. In a bhindi pan add masala into it stir add water (if required) , add salt Stir and bring into boil
  5. Sprinkle curry leaves and serve with white rice
