A quick and fiery green chilli stir fry that adds a zing to any simple vegetarian meal
Slit green chilies lengthwise into 2 - 3 slits
In a wet grinder combine together mustard seeds, garlic and ginger and grind to a coarse paste. Add in a couple of tblspns of water to assist grinding and grind to a smooth paste.
Place a pan on the stove and add mustard oil. Let the oil heat up well.
Add in the green chilies and keep stirring continuously on high flame
Once they slightly change color or appear very lightly charred reduce the flame to medium and add in salt , turmeric and mustard paste.
Stir in briskly and make sure that all the chilies are well coated with the masala.
Leave the pan uncovered for about 5 minutes on low heat . Stir occasionally to ensure that the spices do not get burnt. Switch off the flame and serve.
