About Mixed Vegetable Kofta In Spinach Gravy.... Recipe

Kofta occupies a special place in my kitchen. I am slightly obsessed to make varieties of koftas. Mixed veg kofta, raw banana kofta, lauki kofta, mutton kofta, paneer kofta, malai kofta to name a few. Too often i make mixed veg kofta, but this time instead of putting it in onion-tomato gravy, i added it to spinach gravy to give it a twist and here is the outcome!

Ingredients to make Mixed Vegetable Kofta In Spinach Gravy....

  • For Kofta:
  • carrot..100gms
  • Beans... 100 gms
  • cabbage..100 gms
  • potato... 1 large
  • capsicum... 1 small
  • onion...1 small
  • ginger grated... 1 tsp
  • Green chilli chopped... 1 tsp
  • salt...according to taste
  • oil... 2 tbsp
  • Bread crumbs...1/2 cup( approximately)
  • For gravy...
  • spinach...1 small bunch
  • onion.. i medium size
  • ginger-garlic paste...1 tbsp
  • tomato puree...of 1 large tomato.
  • Green chilli chopped... 1 tbsp
  • Kashmiri red chilli powder...1/2 tsp
  • dhania powder...1 tsp
  • jeera powder... 1/2 tsp
  • Garam masala powder... 1/2 tsp
  • salt.. according to taste
  • sugar...1/4 tsp
  • oil...2 tbsp

How to make Mixed Vegetable Kofta In Spinach Gravy....

  1. Cut beans,carrot,cabbage and potato in medium size. Steam in pressure cooker without water with a little salt. After first whistle, reduce the heat and simmer for 2-3 min. Take it off the fire. Let it cool completely.
  2. Dry the water of vegetables by putting it back on fire. Add chopped onion. chopped chilli and grated ginger. Add salt. Mash with a fork thoroughly. Add bread crumbs as required the make the dough firm. Make medium balls.
  3. Keep in the fridge for minutes. Heat oil in a nonstick frying pan and shallow Fry the koftas on medium heat.
  4. For the gravy... wash and clean spinach. Chop into big pieces. Boil spinach in a little water for 2-3 minutes. Immediately put them in chilled water to retain the color. Once cool blend it in a mixer.
  5. In a wok, take oil. add the chopped onion. Add some sugar. Add ginger garlic paste and green chili. Fry on medium heat till onion turns brown. Add all the spices. Add tomato puree. Add the spinach paste. Stir well. Cook on slow flame.
  6. After 5-6 minutes take it off the fire. Arrange koftas in a shallow serving plate. Pour over the gravy. Microwave for 10 seconds before serving. Enjoy with plain rice.

My Tip:

Adjust breadcrumbs according to the water content of the vegetables,. The quantity of breadcrumbs can be reduced or increased slightly more. But too much of breadcrumbs gives it a funny taste which is not desirable. While frying koftas be careful, handle with care. Do not leave koftas in gravy for long . Pour the gravy on top of koftas , wait for 5 minutes and serve.
