About THANDAI LASSI Recipe

Holi is gone and the summers are knocking. Thus begins the season for cold drinks, juices, lassi, chhaas, etc. Here's a summer special lassi flavoured with homemade thandai masala

THANDAI LASSI

Ingredients to make THANDAI LASSI

  • 20 cashewnuts
  • 15 almonds
  • 15 pistachios
  • 1 teaspoon melon seeds (magaz)
  • 1 teaspoon fennel seeds (saunf)
  • 1 teaspoon poppy seeds (khuskhus)
  • 10-12 strands saffron
  • 3 Green cardamom
  • 10 black peppecorns
  • 250grams chilled yogurt/dahi
  • 1 Cup Chilled Milk
  • 3 tablespoon sugar
  • 2 tablespoon khus syrup

How to make THANDAI LASSI

  1. HEAT A PAN, TO THIS ADD 20 CASHEWNUTS
  2. 15 ALMONDS
  3. 15 PISTACHIOS
  4. 1 TEASPOON MELON SEEDS
  5. ROAST FOR 2 MINUTES ON SLOW FLAME
  6. NEXT ADD 3 GREEN CARDAMOM, 10 BLACK PEPPERCORNS & 1 TEASPOON FENNEL SEEDS
  7. ROAST THIS FOR ANOTHER ONE MINUTE
  8. ADD 1 TEASPOON POPPY SEEDS & ROAST FOR ONE MINUTE. SWITCH OFF THE FLAME & ALLOW THIS TO COOL COMPLETELY
  9. ADD 10-12 SAFFRON STRANDS & MAKE A FINE POWDER
  10. THANDAI MASALA IS READY
  11. IN A JAR , TAKE 250GRAMS CHILLED YOGURT
  12. ADD 1 CUP CHILLED MILK
  13. 3 TEASPOON THANDAI MASALA
  14. 2 TABLESPOON KHUS SYRUP
  15. 3 TABLESPOON SUGAR
  16. BLEND THIS USING AN IMMERSION BLENDER
  17. POUR INTO SERVING GLASS & ENJOY
