ABOUT Udupi Sambar RECIPE

Udupi sambar is so tasty and colorful. It is lightly sweet, spiced, tangy and flavourful.

Ingredients Serving: 10

  1. Carrot peeled and chopped 2
  2. Tender bottle gourd chopped 1
  3. Green beans chopped 1/2 kg
  4. Beetroot peeled and chopped 2
  5. Ivy gourd 1/4 kg
  6. Onion peeled and chopped 4
  7. Salt to taste
  8. For sambar masala..
  9. 10 tsp coriander seeds
  10. 6 tsp urad dal
  11. 2 tsp cumin seeds
  12. 1 tsp fenugreek seeds
  13. 5 tsp yellow lentils / toor dal
  14. 1/8 tsp asafoetida
  15. 1 string Curry leaves
  16. 1/8 tsp turmeric powder
  17. 7-8 byadagi dry red chillies
  18. 2 cup freshly grated coconut
  19. 3 tsp Coconut oil
  20. 1/2 lemon sized tamarind
  21. For tempering...
  22. 1 tsp coconut oil
  23. 1 tsp mustard seeds
  24. 1 broken red chilli
  25. Few coriander leaves

Instructions

  1. Fry only the spices mentioned under sambar masala in low flame till good aroma.
  2. Turn off the flame and curry leaves, saute and mix.
  3. Allow it cool.
  4. Fry the grated coconut till good aroma.
  5. After cool, grind to a fine paste with some water along with grated coconut.
  6. Add tamarind.
  7. Add sufficient water and grind smoothly.
  8. Bring cook all the veggies together with sufficient water (nearly 1 ltr).
  9. Open the lid and check the cookness.
  10. Add chopped onion.
  11. Add salt, mix well and close the lid.
  12. Allow 3 minutes to cook in low flame.
  13. Add ground masala.
  14. Add sufficient water and mix well.
  15. Bring it to boil.
  16. Stir once and allow it to boil.
  17. Simmer for 5 minutes, till the raw aroma of tamarind has disappeared and the whole flavor in the sambar merged each other.
  18. Prepare seasoning by crackling mustard seeds and frying red chilli.
  19. When it boils Continuously, add seasoning.
  20. Add fresh curry leaves.
  21. Cover the lid for 5 minutes, so that the tempering flavor gets mixed with sambar.
  22. Serve this with plain rice, chapati, idli and so on.
