Corn Bhurji

Ingredients to make Corn Bhurji

  • 1 cob corn kernels, partially boiled
  • 1 big sized onion, finely chopped
  • 2 medium sized tomatoes, finely chopped
  • 1 tsp ginger-garlic paste
  • Salt to taste
  • 1 tbsp oil
  • Freshly chopped coriander
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tbsp fresh cream
  • 2 tsp dried kasuri methi

How to make Corn Bhurji

  1. Take a kadai, add in oil, once the oil is hot add the onions and sauté till it turns light brown in colour.
  2. Now add the ginger-garlic paste to it and sauté well.
  3. Then add the chopped tomatoes, salt, red chilli powder, coriander powder, turmeric powder and mix it well. Cover the kadai for a minute.
  4. Once the tomatoes are cooked well and the masalas are done, add the boiled corn and kasuri methi to. Mix it well together.
  5. Cover the kadai the let it cook for two mins, keep stirring in between so the gravy doesn't burn. Now add the fresh cream to it and mix well. Turn off the gas.
  6. Garnish with fresh coriander and serve it hot with roti or rice.
My Tip: Don't put more masala as corn bhurji tastes well with light masalas. Adding cream is optional.
