ABOUT Egg Yolk Curry RECIPE

Different style gravy, made with boiled egg yolks, a perfect accompaniment with rice or roti.

Ingredients Serving: 4

  1. 4 egg boiled
  2. 2 egg yolk
  3. 1 cup milk
  4. 10 to 12 garlic fried cloves
  5. 1 onion fried
  6. 2 tomato
  7. 1 inch ginger
  8. 2 red chilli
  9. 2 Kashmiri mirch
  10. 1 tbsp corriender seeds
  11. 1/2 tsp roasted cumin seeds
  12. 6 black pepper
  13. 4 cloves (laung)
  14. 2 tbsp tomato ketchup
  15. 1 tsp jaggery
  16. 1 tsp kasuri methi
  17. Salt to taste
  18. Oil for cooking
  19. 1 tbsp butter
  20. Some ginger slice
  21. 1 tbsp chopped onion
  22. 1 tbsp chopped fresh corriender

Instructions

  1. Cut the slice of boiled eggs and keep aside
  2. Now take ginger,black pepper corn,laung,roasted cumin seeds, corriender seeds,red chilli,kashmiri mirch,tomato and make fine paste of it,now transfer in a bowl
  3. Now take fried garlic and onion grated,jaggery and make fine paste of it and keep aside it
  4. Now take milk and egg yolk in deep bowl and whisk it till both nicely combined make sure no lumps of yolk remain
  5. Now heat oil a pan add ginger, chilli and tomato paste and saute it till oil remove from it
  6. When oil remove add fried garlic and onion paste in it and saute till smell comes and switch of gas till it slightly cool
  7. When this gravy cool,add whisk egg and milk mixture in it gradually and continue stir it in low flame (not to make curdles is the best gravy)
  8. When all mixture add finally add tomato ketchup and kasuri methi,boiled egg slice, reserve some for time to serving and mix,all process do in low flame when done switch of
  9. Yolk curry is ready to serve.
  10. Now melt butter in a pan add grated ginger in it and fry it
  11. Transfer the curry in a serving bowl,pour grated fry ginger and chopped onion over the top for more taste
  12. Sprinkle some fresh corriender for garnish
