Ingredients to make Fruit Loaf

  • 180 gm soft brown sugar
  • 250 ml milk
  • 250 gm butter
  • 250 gm mixed dried fruits
  • 60 gram cherries (chopped)
  • 1 egg (beaten)
  • 340 gram plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon mixed spice

How to make Fruit Loaf

  1. Take a saucepan and put in the ingredients, sugar, milk, butter, dried fruits and cherries.
  2. Bring this mixture to boil and simmer for 2 to 3 minutes. After this time period set the saucepan aside.
  3. Once this mixture has cooled down, add the beaten egg, sieve in the dry ingredients and combine it well.
  4. Carefully flow this combined mixture into a greased 9 inch loaf tin.
  5. Bake it in a preheated oven at 160 degree Celsius for 60 to 90 minutes until it rises.
  6. Once cooked, leave the loaf in the tin for 5 minutes before moving it to a wire rack to cool.
  7. After it has cooled down, slice pieces and serve as snacks or enjoy it for a breakfast meal.
