Wash, slit and deseed the green chilies.
Rub tamarind chutney on the inner sides of each chilli
Sprinkle pinch of ajwain inside each chilli
Now sprinkle dry Mango powder and pinch of salt inside each chilli
Let it rest for 15 minutes.
Meanwhile mix the gramflour batter for coating the chillies :
Take a deep bowl, add the flours, spice powders, baking soda and salt
Make a thick slurry adding sufficient water
Keep oil for deep frying
Deep each chilli in the batter, coat well and deep fry on hot oil
Drain on a kitchen towel.
Now reheat the oil. Coat the chillies again in the same batter in the same manner and deep fry in hot oil once again.
Drain on a kitchen towel. Let it cool a little to handle properly
Keep the chopped onion and tomatoe ready.
Now make a slit on one side of each chilli and stuff with the chopped onion and tomatoe.
Sprinkle some salt and drizzle few drops of lemon juice to finish
Enjoy lovely hot chatpata mirchi bhajjis with a cuppa
