Ingredients to make Mooli ka achaar

  • 2 cups, chopped radish/mooli
  • 1 tbsp + 1 tsp freshly powdered mustard seeds
  • 3 tbsp mustard oil
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • Salt to taste

How to make Mooli ka achaar

  1. Take the chopped mooli in a pressure cooker, put some water and turmeric powder in it. Cook till one whistle blows and then let it cook in a low flame for 5 minutes.
  2. Turn off the flame after 5 minutes and let the pressure cooker open on its own. Take the mooli out from the pressure cooker and using a strainer discard all the water.
  3. Let it cool completely before adding rest of the ingredients. Now take the mooli in a slightly big bowl and add mustard oil, mustard powder, red chilli powder and salt to taste. Mix them well with light hands.
  4. Make sure everything is combined well. Once done, cover it and keep it in your kitchen shelf over night.
  5. The next morning, give a good stir to the achaar and keep it under sunlight. Once this sunlight procedure is over, transfer the achaar to an airtight box and refrigerate it.
My Tip: Don't pressure cook the moolis too much as it will turn soft, tangy and juicy after you keep it under sunlight. Keep it under sunlight as much as you can. The longer, the better. Most of the pickles needs to be kept under sunlight but this one really doesn't need much effort. I get sunlight in my flat for just 2 hours in a day. I pressure cooked the mooli for 5 minutes in a low flame after the first whistle because I chopped them a bit thick and they were a bit hard as well. To make them soft, I cooked them for 5 minutes.
