A perfect and quìck dish with zucchini

Zucchini curry

Ingredients to make Zucchini curry

  • Zucchini - 2 large sliced round
  • Breadcrumb -1 cup
  • rice powder - 1 tbspn
  • salt
  • ginger garlic paste - 1 tspn
  • onion paste - 3 to 4 tspn
  • Poppy seed paste (optional) - 1 tspn
  • jeera powder -1/2 tspn
  • coriander powder - 1/2 tspn
  • red chilli powder
  • cumin seed -1/4 tspn
  • Garam masala powdee - 1 tspn
  • bay leaves - 2
  • Dry red chilli -1
  • Black cardamon -2
  • turmeric powder - pinch
  • Amchoor powder - pinch
  • Refined oil
  • water

How to make Zucchini curry

  1. In a bowl mix the breadcrumb, rice powder and salt
  2. Add the cut zucchini in the powder mix and put them in baking tray and bake it for 2 mnts. If no baking option, then in a non stick pan brush little oil and roast it for a minute
  3. In a pan heat oil and add cumin seed, dry red chilli, bay leaves and black cardamon.
  4. In a bowl mix the ginger garlic paste, onion paste, cumin powder, coriander powder, salt, poppy seed paste, turmeric powder, red chilli powder, garam masala powder with 1 tspn water to form a paste
  5. Now add the paste in pan and fry it slowly
  6. When oil seperates, add 1 cup water
  7. When the gravy comes to boil, remove the pan from heat
  8. Add the baked zucchini in a serving bowl and add the gravy from top and cover it
  9. Serve it
