Jackfruit seeds curry is very popular in Kerala during summer every house in Kerala relish this curry with combination of Raw Mango..today I have made this curry adding drumstick along with Mango and Jackfruit seeds...next time if you find Jackfruit seeds do not throw away and try this delicious gravy for your rice....so here iam sharing my traditional recipe learnt from my family...

Ingredients Serving: 3

  1. Jackfruit Seeds:- peel and cut in chunk size 1 cup
  2. Raw Mango:- 1 chopped bite size
  3. Drumstick:- 1 peel and cut in to finger size
  4. Turmeric Powder- 1 tsp
  5. Chilly Powder- 1/2 tsp
  6. Salt as per your taste
  7. For grinding Masala:-
  8. Grated Coconut:- 1 cup
  9. Cumin seeds:- 1 tsp
  10. Small onion or Madras Onion:- 3-4 number
  11. Green chilly-1 no
  12. Water
  13. For Tempering:-
  14. Mustard Seeds:- 1 tsp
  15. Fenugreek Seeds:- 1/2 tsp
  16. Dry Red Chillies:- 2 nos
  17. Curry Leaves:- few sprigs
  18. Coconut oil- 1 tbsp
  19. Fenugreek powder:- 1 pinch

Instructions

  1. Take a deep port and boil jackfruit seeds to 80 %, once cooked add drumstick,turmeric powder, chilly powder and salt cook for another 5 mins and now in last add mango pieces.
  2. Now grind all masala given in the list to fine paste, add this masala to cooked jackfruit seeds. Allow it cook for 2-3 mins and then remove from fire and set aside
  3. Heat another pan add coconut oil or any oil of your choice ( but this dish taste good with coconut oil) add mustard seeds, red chilly, curry leaves and fenugreek seeds and powder. Allow it to splutter.
  4. Pour this tempering to gravy and cover with lid immediately to set all aroma of tempering in gravy.
  5. Serve this tangy dish with steam rice.
