ABOUT Traditional Polish Babka RECIPE

A sweet yeasted bread that is full of crunchy almonds and juicy raisins, traditionally baked on Easter to celebrate the rising of Christ.

Ingredients Serving: 10

  1. 3 cups Flour
  2. 1 cup milk
  3. 70gms Butter
  4. 1 tbsp Dry yeast
  5. 2 Eggs, at room temp.
  6. 1 Egg yolk, at room temp.
  7. 4 tbsp sugar
  8. 1/4 tsp Salt
  9. 1/2 cup Sliced Almonds
  10. 1/2 cup Raisins
  11. Zest of 1 orange and 1 Lemon
  12. 1/2 tsp Vanilla extract

Instructions

  1. Heat the Milk in a pan till warm. Add the butter, sugar and yeast and leave for 15 minutes.
  2. Then add in eggs, egg yolks, zest, vanilla extract and salt. Whisk lightly.
  3. Measure out flour in a large bowl and start kneading with the Milk mixture. It should be a soft smooth dough after 10 minutes of kneading(you can add more lukewarm water if necessary).
  4. Now knead in the sliced Almonds and raisins. Place dough in a very large buttered bowl and leave to rise for an hour.
  5. After 1 hour, punch dough down, knead briefly and let rise again for an hour.
  6. Preheat oven at 350 deg F. Butter an angel food pan, transfer dough to pan and cover loosely. Let dough rise to the top of pan.
  7. Bake for 30-40 minutes until tops are golden brown.
