Curry made of fresh leaves

Ajwain leaves curry

Ingredients to make Ajwain leaves curry

  • 1 tbsp ghee
  • 10 to 12 fresh ajwain leaves
  • 1/2 tsp cumin seeds
  • 8 to 10 pepper corns
  • 1 green chilly chopped
  • 1/2 cup fresh coconut grated
  • 1 cup thick curd
  • salt to taste

How to make Ajwain leaves curry

  1. Put ghee in a deep wok and heat it than add cumin seeds and pepper corns.
  2. When they crackle add green chilly and sauté and than add the ajwain leaves and sauté till the leaves get soft and changes colour.
  3. Now switch off the gas and let it cool.
  4. Once the ajwain leaves are cooled remove it in a mixer add coconut and make a smooth paste.
  5. Add little water if required.
  6. Now take that same wok put the paste in it and sauté for a min.
  7. Till than whisk the curd with very little water.
  8. Now add the whisked curd in the wok salt to taste and mix well and switch off the flame.
  9. Serve with rice.
  10. You can put tadka on top as well as with ghee and jeera before serving.

My Tip:

You can adjust the water if you wish to make it thin but its best when thick and can add bajiya also in it.
