Ingredients Serving: 3

  1. Medium sized potatoes 2 .
  2. Red ripened big tomatoes 2
  3. Pav buns 6
  4. Onion medium sized 2 finely chopped
  5. Garlic paste 1 teaspoon
  6. Turmeric powder 1/2 teaspoon
  7. Kashmiri chilli powder 2 teaspoons
  8. Garam masala 1 teaspoon
  9. Cumin powder 1 teaspoon
  10. Water 1 large glass
  11. butter 3 tablespoons
  12. Salt as taste
  13. Red capsicum diced 1/2 cup .
  14. Lemon 1/2 cut into slices .

Instructions

  1. Firstly , in a container boil a glass of water . Roughly chop the tomatoes , potatoes and red capsicum and add these into the boiling water . Let these vegetables boil for 15 minutes so that they turn mushy . Save few boiled potato strips for later use ( optional ) .
  2. Mash the boiled vegetables completely and make into a pulp consistency .
  3. In a wok , heat 1 tablespoon butter , add 1.5 onion finely chopped . Sauté till it becomes translucent . Add the garlic paste , cumin powder and sauté for few seconds . Then add the vegetable pulp . Add the dry powders . Mix well and cook for another 3 minutes until the masala blends completely . Now add the reserved boiled potato strips and mix well . Cook for two minutes . Switch off the flame . Add dollops of butter generously on top .
  4. Now take another onion and finely chop . This finely chopped onions could be used for garnishing and serving purpose .
  5. Cut few slices of lemon . Use it for garnishing . Squeeze 1 slice of lime on the prepared Baji . All these to be done just before serving .
  6. In another pan , melt 1 tablespoon butter and gently toast the Pav buns . Flip either sides and toast slightly . Switch off the flame .
  7. Pav / Aloo Baji is ready to serve .
