Ingredients Serving: 6

  1. For the Dough: Soya flour 25 gms
  2. Refined flour 75 gms
  3. Desi ghee 25 gms
  4. Cold water as required
  5. For stuffing: Ghee 1 tsp
  6. Mung dhuli daal 20 gms
  7. Dalia 20 gms
  8. Milk 1 1/4 cup
  9. Milk powder 3 tbsp
  10. Khoya 100 gms
  11. Mix dry fruits 35 gms
  12. Coconut powder 15 gms
  13. Powdered sugar 50 gm
  14. Cardamom powder 1/4 tsp
  15. For Nizam: Maida 1 tbsp + Water 2 tbsp
  16. For Glaze: Sugar 1/2 cup + Water 1/4 cup
  17. Pinch of Saffron strands
  18. Pinch of cardamom powder
  19. For Sauce:
  20. Orange juice 1/2 cup + Cornstarch 1/2 tsp
  21. To Garnish: Sliced pista & Silver warak

Instructions

  1. In a bowl add soya flour, refined flour, ghee and mix it well. Add cold water and make a stiff dough.
  2. In a cooker, add 1 tsp ghee, dalia and roast for a minute. Add washed Moong dal and saute for a minute or two, add milk. Pressure cook it for two whistle, turn off the flame, let the steam release on its own, open the lid and grind it into a paste, pour this batter in a non stick pan and stir it continuously on a low flame. Soon it will look like khoya or a dough.
  3. In another pan add 1 tsp ghee, roast the dry fruits and take them out. ln the same pan roast the khoya and let it cool. Now mix khoya, daliya and daal mixture, dry fruits, powdered sugar and cardamom powder - The stuffing is ready.
  4. Prepare the nizam with refined flour and water. Roll out the dough. Cut into circle, apply nizam put some filling and seal it from the edges.
  5. Preheat the airfryer at 200 degree centigrade, cook the greased gujiya in for 10 minutes or till golden in colour, flip the gujiya after 5 minutes.
  6. Prepare the sugar syrup of two thread consistency. Dip the gujiya in syrup and place on a wire rack. Garnish with pista and silver warak.
  7. Prepare an orange sauce for garnish and as a dip.
