Ingredients to make leaf mathri

  • 1 cup all purpose flour
  • 1.5 tbsp oil
  • salt to taste
  • 1/4 tsp carom seeds
  • spinach puree as required
  • oil for deep frying

How to make leaf mathri

  1. mix flour, salt, carom seeds and oil in a mixing bowl
  2. add spinach puree little by little and prepare a stiff dough
  3. cover the dough and keep aside for 15 minutes
  4. knead the dough again after 15 minutes and pinch lemon sized balls from it
  5. take a ball and roll into a thin round chapati using rolling pin
  6. cut this chapati into a rectangular sheet as given in the picture
  7. make slits on the sheet leaving some space on the edges
  8. now fold the sheet in half, you can put little water at the edges
  9. fold once again in half as shown in the image
  10. take one of the sides and fold in reverse through the middle of layers
  11. mathri in leaf shape is ready
  12. make all in the same way
  13. heat oil in a kadai
  14. when oil becomes hot, reduce the flame to low
  15. now add the mathris and fry until crispy
  16. remove the mathris from oil and drain on the absorbent paper
  17. serve or store in an air tight cotainer after it becomes cool
