Ingredients to make Kancheepuram idli

  • 3/4 cup raw rice
  • 1/2 cup urad dal whole
  • 1/2 tsp methi seeds
  • 1 tsp black pepper
  • 1 tsp jeera
  • 1/2 tsp dry ginger powder
  • 2 tsp ghee
  • Cashew for garnishing
  • 1/4 tsp mustard seeds
  • 1/2 tsp udad dal
  • 1/2 tsp chana dal
  • Curry leaves
  • Asfoetida
  • Banana leaf for steaming

How to make Kancheepuram idli

  1. Soak rice,urad dal and methi seeds for two hours and grind coarsely.
  2. Crush pepper and jeera.
  3. Add ghee in kadai,add pepper,jeera,asfoetida ,mustard seeds,dals ,curry leaves,ginger powder cashews. Fry and add idli batter .add salt.,keep aside for two hours.
  4. Take long steel glasses ,put banana leaf inside the glass ,shaping to look like glass.
  5. Put the batter and steam for 1 hour..
  6. The above batter gives two glasses of idli...
My Tip: If you want sour add curd.
