Ingredients Serving: 2

  1. Quinoa (pre-washed)1/2 cup
  2. Old fashioned oats 1/2 cup
  3. Assorted vegetables (carrot ,beans,corn,green peas)1 cup
  4. Curry pwd 1 tsp
  5. Onion small 1 sliced
  6. Ginger 1/2" finely chopped
  7. Green chilli 1 or to taste
  8. Garlic Cloves 1-2 finely chopped
  9. Oil for cooking
  10. Water 2 cup
  11. Cumin seeds 1 tsp
  12. Green coriander leaves for garnishing

Instructions

  1. Heat oil in a pot then add cumin seeds once it crackles, add onion & saute till it becomes pink in color, add garlic & ginger. Once raw aroma goes off, add vegetables and curry powder & stir.
  2. Add quinoa & oats saute on med-low heat for 2-3 min.Add salt & mix. Adding water once it started boiling turn heat on med-low flame. Cook till water evaporates.
  3. Turn off heat, let it cook covered for 5 min more.Serve hot garnishing with green coriander leaves.
