Ingredients to make Aam ka achar

  • Green mango 2 1/2 kg
  • Mustard oil 500gm
  • Whole black pepper 125gm
  • Fenugreek seeds 125gm
  • Fennel seeds 125gm
  • Salt 1/2 kg
  • Red chilly pwd 1tbsp
  • Turmeric 2tsp
  • Garam masala 1tsp
  • Coriander pwd 1tbsp
  • Cumin seeds 25gm
  • Kalonji or nigella seeds 30gm

How to make Aam ka achar

  1. Cut the washed mangoes in small pieces, spread on a cotton sheet and let it dry in sunshine for half an hour.
  2. Now coarsely grind the dry spices.
  3. Tranfer the mangoes in a broad bowl .
  4. Add 1/4 of oil in dry spices and mix well , spread this spices over the mangoes and mix well . Untill all the masala gets coated on the mango pieces.
  5. Transfer into a sterlized container, add the leftover oil and close the lid.
  6. Place it in sunshine for 6-7 days.
  7. Now we can relish the pickle .

My Tip:

Use clean and dry things to make pickle.
