Fish and Chips

Ingredients to make Fish and Chips

  • Tilapia fish fillets - 10 (2" strips)
  • Maida - 2 cups
  • Beer - 1/2 cup
  • Salt
  • Black pepper powder - 1/2 teaspoon
  • Garlic powder - 1 teaspoon
  • Cajun seasoning - 1 teaspoon
  • Lemon juice - 1 table spoon
  • Corn starch - 1/2 cup
  • Ice cubes - few cubes
  • Oil for fying
  • Potato cut into french fry strips
  • Water
  • Tartar sauce
  • Onion slices
  • Lemon rings
  • Mint leaves (optional) - for garnish

How to make Fish and Chips

  1. For fish:
  2. Marinate fish with salt, pepper powder, garlic powder, cajun seasoning and lemon juice and keep inside the refrigerator for 1 hour.
  3. Make a batter with maida, cornstarch, beer, water and salt.
  4. Tip: Put few ice cubes into the batter. It will help to make the batter crispy. (Adjust batter by adding more maida if ice cubes start leaving water). Let the batter rest covered for 2 hours.
  5. Dredge fish in dry flour and dip in batter.
  6. Deep fry batter coated fish in high flame till golden brown.
  7. Serve immediately with french fries, sauce and salad.
  8. For french fries:
  9. Blanch french fries in boiling water & salt for 1 minute.
  10. Drain french fries and deep fry in high flame till golden brown.
