Bitter gourd slices dipped in a spicy batter and deep fried.

Bitter Gourd Crispies

Ingredients to make Bitter Gourd Crispies

  • 2 bitter gourds (sliced)
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/4 tsp chaat masala
  • 1/4 tsp garam masala
  • 2 tbs chickpea flour
  • 2 tbs arrowroot powder/ rice flour
  • salt to taste

How to make Bitter Gourd Crispies

  1. Slice the bitter gourd and remove the seeds.
  2. Add salt to the bitter gourd and mix well. Keep aside for 5 minutes. It will leave water. Drain the water.
  3. Add all the remaining ingredients and mix well. Let it marinate for another 10 minutes.
  4. Deep fry on medium heat till golden brown and crisp.
  5. Serve hot as an accompaniment with rice or rotis.

My Tip:

Spices can be adjusted according to taste. Use very little oil and deep fry in small batches.

want to know when do you wash the karelas ? Is it before adding the dry ingredients or when the pith and seeds are removed ?
