Ingredients to make Sweet & spicy raw mango pickle

  • Raw mango - 2 large
  • Dry roast Bengali five spice (panchforan) - 1 tbsp
  • Sugar - small 1 cup
  • Salt - 3-4 tbsp
  • Mustard oil -5 tbsp
  • Turmeric powder -1tsp
  • Chili powder -1 -2tsp
  • Viniger -2-3tbsp

How to make Sweet & spicy raw mango pickle

  1. Cut mango length wise ..wash it and dry properly
  2. Marinate raw mango with 3-4tsp salt for whole night..next morning keep mangoes on strainer for drain out excess salt water..
  3. Dry roast 1 tsp cumin seeds , 1/2 tsp onion seeds, 1tsp mustard seeds ,1tsp snauf, 1 tsp fenugreek seeds, 2 dry red chilies. And grind to a coarse powder. .
  4. Heat karai with 5 tbsp of mustard oil. Add salted mangoes...stirring continuously for 2-3 mints....then add sugar, mix it well..
  5. Cover karai with lid, reduce flame for 7-8 mints.
  6. After 7-8 mints .when pickle gravy dried up 40%...add dry roasted five spice, and vinaigrette ...mix it well...keep pickle gravy as per your desire consistency.....turn off gas..
  7. Sweet n spicy raw mango pickle is ready.....keep it in a glass jar..
