Green Mango Relish Chunda

Ingredients to make Green Mango Relish Chunda

  • 1 kg raw mangoes
  • 500 gms or less sugar depending on the sourness of the mangoes
  • 2 tsp Kala namak or black salt
  • 2 tsp roasted zeera or cumin powder
  • 2 tsp red chilli flakes
  • 2-4 tbsp roasted seeds or raisins

How to make Green Mango Relish Chunda

  1. Wash, dry and peel the firm raw mangoes. Grate with the large grater and place in a large steel saucepan.
  2. Add the black salt and turmeric powder and set aside 15 minutes.
  3. Add 100 gms of the sugar. After 15 minutes mangoes will leave water. Mix sugar in. Like this mix in most of the sugar in three batches. Leave 50 gms sugar for adding later.
  4. Now place pan on low heat and cook till the sugar cooks in mango syrup. You need to cook till one thread consistency. Check after 15-20 minutes while you are stirring with a steel spoon.
  5. If the chunda is not sweet enough add the remaining sugar. Once the syrup is one thread consistency add the red chillies and cumin seed powder. Check for salt and adjust the seasoning.
  6. Stir and turn off the heat. Now add the watermelon seeds or roasted almonds or raisins . Mix in. Cover with a cloth and allow to cool for 10-15 minutes.
  7. Spoon into wide mouthed jar cover and store in fridge.
My Tip: Serve with normal meals. Serve with salted olives or paneer with fried onions sprinkled for an extra crunch. Add as a sandwich spread, excellent combination with salami or bruschetta . Impress your dinner party guests and serve with your cocktails.
