ABOUT Brinjal Pickle RECIPE

A sweet and sour pickle using brinjals.

Ingredients Serving: 4

  1. 500 gms Brinjals (the purple and white striped variety)
  2. 100 ml oil
  3. 3 tbs sugar
  4. 50 ml vinegar
  5. 2 pods garlic
  6. 1 1/2 inch ginger
  7. 1 tsp mustard seeds
  8. 1/2 tsp cumin seeds
  9. 1/2 tsp roasted fenugreek seeds
  10. 1 tsp turmeric powder
  11. 10 - 15 dry red chillies

Instructions

  1. Cut the brinjals into 8 parts. Add salt and turmeric powder and keep aside for 1 hour.
  2. Grind garlic, ginger, mustard seeds, cumin seeds, fenugreek seeds and chillies in vinegar.
  3. In a pan, heat oil. Once hot, add the ground masala and fry well for 2 - 3 minutes.
  4. Add the brinjals and sugar. Add about half cup water. ( Water used to rinse the mixer grinder jar after grinding masala can be used)
  5. Cook on slow flame for 15 minutes till brinjals are cooked, stirring occasionally.
  6. Store in clean and dry jars once cooled.
