ABOUT Rice Thin Noodles... RECIPE

These thin rice noodles are a quick alternative that comes to our rescue when we have had a pretty tired day at our workplace. These can be whipped up in just a matter of few minutes even with very few veggies available in our pantry. Make these thin and melt in mouth noodles for a scrumptious snack time or a full meal that is so so satiating. Happy Easy Cooking Friends !!!!!!!!!!!!!

Ingredients Serving: 6

  1. Rice noodles 500 gm
  2. Capsicum chopped 2
  3. Spring onions chopped 2 cups
  4. Red onion sliced 1
  5. Tomato chopped small 1 (optional)
  6. Garlic mince 2 tsp
  7. Soy sauce 2 tbsp
  8. Green peas boiled 1/2 cup
  9. Coriander leaves chopped 1/4th cup
  10. Salt 1 tsp+ 1 tsp
  11. Olive oil 2 tbsp
  12. Cumin powder 1 tsp
  13. Red chilli flakes 1 tbsp
  14. Green chillies finely chopped 2
  15. Lemon juice 1 tbsp
  16. Boiled eggs 5-6 (optional)

Instructions

  1. Boil 5 to 6 cups of water with salt at first.
  2. Take it off the heat and add broken noodles to it and cover.
  3. Allow them to cook in that hot water for about 5 minutes and then drain.
  4. Keep that aside.
  5. Now is the time to stir fry the veggies.
  6. Add olive oil to a cooking pot. Add garlic mince to it at first.
  7. Followed by sliced red onion.
  8. Saute it for a minute and then add the green onions, capsicum and boiled peas.
  9. Add all the spices mentioned and give it all a stir fry on medium heat.
  10. Adjust salt and squeeze some lemon juice on top.
  11. Now is the time for plating, add the noodles on a serving plate.
  12. Top with the stir fried veggies and mix well.
  13. Serve hot immediately with boiled eggs which are completely optional.
