We all know about pineapple "madhura" means sweet in malayalam and pachadi is kind of raita we make it in Kerala with different ingredients. Generally when I say Pachadi this is always a curd based but this one pachadi is bit different from our usual curd based pachadi....Lets see the ingredients and process

Ingredients Serving: 4

  1. Pineapple- cute in small pieces ( 1 cup)
  2. Chilly powder- 1 1/2 tsp
  3. Salt as per your taste
  4. Jaggery- 1 tbsp
  5. Tamarind- a small lemon size, (Small tamarind in hot water and take out thick juice)
  6. For grinding paste
  7. Grated coconut - 1 small cup
  8. Greenchilly -1 no
  9. Curry leaves
  10. For tadka
  11. Coconut oil -1 tsp
  12. Mustard seeds- 1tsp
  13. Curry leaves- few sprigs
  14. Dry red chilly-2 nos

Instructions

  1. Boil pineapple pieces in deep pot or kadai adding little salt and chilly powder. Allow it cook until pineapple pieces turns soft and tender
  2. Meanwhile grind grated coconut,greenchilly,and curry leaves adding little water and make a smooth paste.
  3. Now check the pineapple pieces, if it turns tender add tamarind juice and grated jaggery mix well.
  4. Add ground paste of coconut with pineapple and cook for 2-3 mins in very low flame.
  5. Remove from fire and set aside.
  6. Now for tadka, heat tadka pan add coconut oil,mustard seeds,curry leaves and red chillies fry for 2 mins and pour this tadka on cooked pineapple. close with lids and set aside. Let the aroma of chilly and curry set inside
